Quinoa Chocolate Peanut Butter Cookies

Healthy recipe, gluten free recipe, chocolate, quinoaHere is a cookie that is gluten free, low in sugar and can actually be considered a meal! Quinoa is a complete protein grain-it has all the essential amino acids your body needs. Because of its complexity, quinoa is a starch that won’t spike your blood sugar so consuming these cookies can provide long lasting energy.

 Ingredients:

• 2 cups cooked quinoa, cooled
• 1/2 cup peanut butter
• 3 Tbsp maple syrup
• 1/4 tsp salt
• 3/4 cup GF rolled oats
• 1/2 cup shredded coconut, optional
• 1/2 cup chocolate chips

Directions:
Combine quinoa, peanut butter, maple syrup, salt, and oats in a large mixing bowl. Mix well, and then stir in coconut and chocolate chips. Shape into small balls and place on a greased baking sheet, and bake at 350°F for approximately 20 minutes, until bottoms are nicely browned. These cookies are low in sugar and are a fun treat. Replace Peanut Butter with Sunflower butter if there are allergies and use Carob Chips or Vegan Chocolate Chips in place of milk chocolate for dairy sensitivity.
