I made the easiest, yummiest ribs tonight and thought i would share the recipe. Whether you are a working outside the home mom, a home-based business mom, or a full time mom – this is super easy and my kids loved them. I put these in the oven and went back to work!
Makes 4-6 servings
- 1 large onion, sliced
- 3.5 lbs (i used 2 slabs) baby back ribs
- 1 can beer (12oz)
- salt and pepper to taste
- Your favorite BBQ sauce!
- Preheat oven to 350. Spread onion slices evenly on a rimmed baking sheet and place ribs, bone side down, on top. Pour beer over ribs, sprinkle with salt and pepper. Cover tightly with foil. Bake 3 hours or until tender.(yes, 3 hours! This is when I went back to work!)
- Brush both sides of ribs with BBQ sauce and grill over medium heat. (I actually “grilled” them on my grill pan in the kitchen) Grill 10 minutes each side basting often. The instructions were to “cut ribs apart” – which was totally unnecessary because they fell apart – the meat fell off the bone and was so yummy!
